Brussels & Cabbage Hash with Apples & Leeks


Happy New Year my lovely friends.

This is my 14th year of blogging, where does the time go?

I had to share this delicious recipe with you invented from cleaning out the fridge (all the best recipes are invented that way!).

It's a sort of vegetable hash.....wonderful as a side for roast chicken.....tossed with quinoa.....or in an omelet with shredded cheese.

There are no rules but I loved it so much, I wanted to write it down for you (and me!).

Use as much or as little of each ingredient as you like.

Here's how:

1 bag of Brussels sprouts, trimmed and sliced
2 garlic cloves
1 fat leek, trimmed and sliced
1 large apple, diced (I leave the skin on!)
1/4 cup of shredded purple cabbage
olive oil 
kosher salt & pepper


Heat a large heavy skillet with olive oil and saute everything for about 8-10 minutes.  Season with kosher salt as you are sauteeing the vegetables.

Eat warm or cold.....it's so delicious.
