Kimchi Pancake


I have found yet another recipe to use my beloved kimchi in.

A korean pancake.

The perfect breakfast or snack. You can even serve them as an appetizer for company.

If you are sick of me and my kimchi, I am sorry.
You know I get obsessed with an ingredient and it takes over my life.

Here's how to make them:

Korean Kimchi Pancake (makes 2 big ones):

1 1/2 cups of kimchi
2 tbsp of kimchi liquid
2 eggs
1 cup of flour
chopped scallions

Chop the kimchi and mix in a bowl with the eggs, flour and scallions. I hear if you have some leftover pork you should throw it in too.

Mix together with a fork to make a pancake batter.

In a large non-stick skillet, heat some vegetable oil.
When the oil is hot, pour in half the batter and spread out to make a thin pancake.


Cook 1-2 minutes on first side, then flip and cook another minute.

Remove the pancake to a cutting board and make the 2nd pancake using the same process.

Slice into triangles, like you would a pizza and place on a platter.


Serve w/ soy sauce mixed w/ a little sesame oil.

Delicious and easy.

Grind up about a cup of kimchi in the food processor. Mix it in with a pound of ground beef and make kimchi burgers. Mix a little soy sauce or wasabi with mayonnaise as a condiment. Serve using big lettuce leaves as a wrapper.
