Seared Salmon w/ Roasted Citrus


Here is what I did with yesterday's roasted citrus!

I seared a beautiful piece of wild salmon and plated it on arugula mixed w/ the chopped roasted citrus, roasted beets and kalamata olives.


I made a dressing with honey, white balsamic vinegar and olive oil.
Seasoned w/ sea salt & pepper.

Lunch is served.


Divine.

Not sure what's going on here, but I want you to know that I read your blog daily and would miss it if for some reason this mukedy muck gets you down and you stop posting. Thanks for all the wonderful recipes and beautiful photos.

I read the emails between Anonymous and you this morning before you deleted them. For what it's worth, I am sick and tired of reading the rantings of Anonymous. Most of the comments are obnoxious anyway. Anyone who will not post their name and hides behind "Anonymous" isn't worth publishing anyway.

I think you may know who it is and, if you do, please block his/her comments. I really enjoy your blog but I cringe when I see Anonymous posting.

I actually deleted some Loan Officer spam in Spanish! Not Ms. Anonymous' comments......

I really don't know who she is, but she is fine.
She is very smart and I never mind her commentary here..............

However, I think I am going to take your advice and no longer accept "anonymous" comments, too many weirdos out there posting negative things who don't want to own what they say.

There was no hard feelings on my part, trust me, I use the F word multiple times a day!

Did you remove the rind from the citrus before chopping, and if not, was it bitter?

I did not remove the rind from the citrus.

It tastes a bit like candied orange, but if you don't like that taste, you might want to remove it.

I love to eat the rind of oranges, but that's me. It's a little bitter but in a good way.
