August Cooking: Grilled Salmon w/ Corn Salad

It's too hot to cook (if you are not hip and can't read hashtags, like me).

Make a nice corn salad, cause corn is gorgeous right now.

If you are lazy (and I don't blame you in the heat), then open a can of corn instead of slicing fresh cobs into a bowl.

Add in some quartered cherry tomatoes, chopped scallions, red onion, and fresh cilantro to the corn.
Squeeze in some fresh lime juice and olive oil.
Season w/ sea salt & pepper.

Voila, your corn salad is ready to top on the grilled salmon!

I like to grill my salmon in my Lodge cast iron skillet outside, so my kitchen stays nice and cool.


Serve with a nice Pinot Grigio or tall glass of iced tea.

Don't you feel cooler now?

Forget that comment about the skillet. I have a 44 year old cast iron skillet. But what's that other skillet that you recommended a while back?

Doing something similar, but add a can of black beans to the salad.
