A Week of Lunches

Some of you would say my husband is spoiled. You would be correct.

I make my husband's lunch 6 days a week (Sunday is my day off).
I pack a lunch box every morning.

Lucky him.

It's hard to be creative after all these years, but somehow I manage to surprise him once in a while with something new.

No boring tuna sandwich (well, sometimes) here.

I try and make enough food for dinner, so there are always leftovers for lunch the next day.
This would include a frittata, which is excellent the next day on bread w/ some garlic mayo, served at room temperature.

I post a lot of sandwiches on this blog, but here is last week's lunch box sampling.

Ham, Salami, Roasted Peppers and Olivada w/ Fresh Mozzarella on Ciabatta Rolls. Italiano!

Duck Liver Pate w/ Cornichons & Dijon Mustard on Raisin Pecan Bread. Parlez Vous Francais?

Egg Salad w/ Chives, Dijon Mustard & Mayo w/ Bacon on Brioche. My favorite!

Grilled Chicken Breasts, Roasted Peppers & Homemade Basil Pesto.

Veggie Sandwich w/ Jarlsberg, Red Peppers, Cukes & Sprouts w/ Herb Mayo. (here is recipe).

Peanut Butter & Nutella on Whole Wheat.

Have a great weekend!

Will you pack MY lunch? I hope he knows how lucky he is!!!
Love the idea of leftover frittata on bread! That will be in my lunch next week :)

Holy cow! That was one week?! Like the first responder said - will you pack MY lunch? I usually eat the same thing for a week and then switch but I DO bring my lunch. Eating out for lunch during the week just costs so much money. You choose where you spend your money and I have better plans than the local deli five times a week! Maybe my next vacation?

Holy cow! Henry's lunch must be the talk at the "water cooler." Now that's a man who is treated with respect.

Henry probably provides a great "dish" of his own!
Great looking sandwiches! Henry is a lucky guy and I'm sure that he knows that.

He obviously chose well! You're a gem!
Duck liver pate? now that's a first coming from a lunch box!
Spoiled to the max, even a variety of assorted breads. I think it should become a book, "What's in Henry's lunch box?"
What else is in there, fruit, chips, any sweets? Tony got chicken salad wrapped up in a collard green this week, ha ha

That"s it. I'm going to have to hide your web page in my browsing history. Can't have my husband stumbling onto this. Lucky Henry!

He's one lucky guy - it's a gourmand lunch every day of the week! I make my HS daughter PB + Nutella on occasion to school, but must try some of your other great-sounding sandwiches. Used to work in Morristown & loved going to C'est Cheese, although I never had the Veggie Sandwich, but will definitely try to duplicate for myself one of these days. You are amazing Stacey!
What a sweetie you are! No wonder you and Henry are always smiling.....you look after each other. A great lesson....

Wow, you and Henry have what it takes to keep each other happy. It's the small things like making lunch that become big things in a marriage. You've set a good example for all of us Stacey.
