Grilled Vegetable Wraps



These are grilled vegetable wraps, plain and simple, but there is nothing really plain about the taste. They are the best of summer. I want to eat this everyday for lunch until the Jersey tomatoes are ready so I can eat tomato sandwiches w/ mayonnaise.



Grill up a big batch of vegetables (recipe is here), so you have them on hand all week.

Lay out your wrap (I use Damascus Bakery flax wraps) and spread with some store bought pesto.



Lay out the vegetables, I used zucchini, eggplant, red onions and red bell peppers.
Add a slice of fresh mozzarella cheese and 2 basil leaves and roll.

Cut into quarters and serve.



Loved.

So healthy! Sadly the capsicums here in Australia at the moment cost $10 per Kg. But in summer i love grilling them and smothering them in olive oil and sweet roasted garlic.

Nothing better! Thanks for a good reminder about grilled veggies! Oh and I grew up on white bread, Jersey tomatoes and hellman's mayo sandwiches. YUM!
