Good Ideas: Asparagus Frittata



What to do with the mother load of leftover grilled asparagus?
Make a frittata.

I had a huge bunch of grilled asparagus leftover from the weekend (the last of the local spears) so decided on this easy savory frittata baked in the oven.

Chop up your leftover cooked asparagus and mix it in with 6 eggs and a cup of feta cheese.

Chop an onion and saute in olive oil for 3 minutes. Add the cooked onion to the asparagus egg mixture.



That's it.

Season with salt & pepper and bake in a buttered 9" pie dish for 35 minutes.

Let cool before cutting into wedges.



Easy and delish.

Stacey - We're on the same wavelength. I made a similar frittata last week, and placed the asparagus in a spoke too, but I didn't think to grill the asparagus. I'm sure that gives it a special flavor.

Frittatas are absolutely my favorite go-to dish to use up left-overs. You can put almost anything in one and it will taste fabulous. Yours is gorgeous to boot....bonus points for you. - S

This was simple and delicious. I added hash brown potatoes and ham. Baked it@ 3:50 for 25 minutes and 375 for 10 minutes to brown the top! Thanks for the recipe!
