Good Ideas: Roasted Cauliflower w/ Grapes & Red Onion

Here is yet another way to prepare my beloved cauliflower.

My husband said it was his favorite way so far!

Roasting grapes intesifies their sweetness. Use only red or black grapes.
They are also fantastic roasted with butternut squash.

Cut up a head of cauliflower into florets and toss them on a baking sheet w/ red or black seedless grapes and big slices of red onion.

Sprinkle liberally w/ kosher salt and olive oil.



Roast in a 425F oven for about 20-30 minutes until cauliflower is turning a nice caramel color, shaking the pan a few times in between cooking.



Excellent on its own or as a side to roasted chicken.

Delurking for the first time (longtime reader!) to tell you I tried this dish tonight and my husband went crazy for it. It was AMAZING. The grapes caramelize and swell and burst into something indescribable. I love this dish and I love your blog!

I combined part of this recipe with the other one you have from "Two Dudes." Didn't have grapes, but roasted the cauliflower with onions and later tossed some parmesan, capers and red pepper on them. Very good!
