Detox: Orange, Avocado & Tomato Salad

'Tis the week of Stacey detoxing on salads and whole grains.

No alcohol and no sweets. I do it every year after the holidays because I feel so sluggish from all the eating and drinking during the holiday season.

I will try and post a healthy meal for the next few days (notice the word "try").

This is an unusual combination of ingredients, but it worked and was fabulous.

Tomatoes are not in season in NJ, however, I used heirloom cherry tomatoes from the grocery store. I found the recipe on Eileen's blog from August.
This salad is a keeper, and will be great during the summer months, when tomatoes are plentiful.

Orange, Tomato & Avocado Salad (adapted from Living Tastefully):

• 2 teaspoons fresh lemon juice
• 4 teaspoons extra-virgin olive oil
• 2 avocados, large dice
• 2 tomatoes, preferably heirloom, cut into large dice
• 2 oranges, peeled and sliced into thick rounds (I used clementines)
• 1 small red onion, sliced into rings
• 10 to 12 black olives, pitted
• 1/4 cup sliced almonds, toasted
• salt and freshly ground pepper to taste

1. Whisk together the lemon juice and extra-virgin olive oil. Season to taste with salt and pepper. Gently toss the diced avocados and tomatoes with half of the lemon juice-olive oil vinaigrette.

2. Arrange the orange slices on a platter. Scatter the red onion slices over the oranges and drizzle with the remaining half of the vinaigrette.



3. Spoon the avocados and tomatoes on top of the oranges. Top with black olives and almonds.



Not only is this a delicious salad, but it is a healthy & cholesterol lowering meal.......it has nuts, olives, avocado, and fruit. What could be better?

A big happy birthday to Henry. I need to start a detox diet too, but what to do with the leftover cookies, cakes and ice cream? Should I eat them all at one and be done with it? Is it less calories that way?

Hi Stacey- I have never made this salad during the winter months. I've only allowed myself to enjoy it during the summer when I have my own home-grown tomatoes... But I am also in dire need of healthy foods after the holidays (the squirrels in my backyard are getting all of the leftover cookies today) and will make this, as you suggest, with heirloom cherry tomatoes.

We're detoxing as well. Made a big pot of vegetable soup yesterday. Still some seasonal goodies to post. Thanks again for being a part of our holidays. We're sending wishes to Henry for a very happy birthday.

The salad is so pretty. That helps when you're trying to eat right if the food is appealing.

I need to detox too (from too many sweets).
Happy Birthday Henry! What, no cake today from Stace? As for detoxing, I'm all about clean and healthy food for now, so I love this salad. Making another huge pot of vegetable minestrone today, its a nice filler upper!

boy does that look good! It looks like a good way to use up some tangerines I have sitting over there, too.
Sounds like exactly what I need. I had a very rough night over the weekend and feel like I need to wash my system out with distilled water.
We're trying to eat healthy also. Love your salad. Happy birthday Henry. I hope you have a great day even if Stacey isn't making a cake. Personally if it were my birthday, I might pout just a little if I had to be good all day.
