Arugula Salad w/ Beets, Walnuts & Brie

This is my kind of lunch.

Quick, easy, healthy and delicious. My four favorite words when it comes to food.

You can purchase already roasted beets in a vacuum pack and they are almost as good as roasting your own.



You can add any other cheese you like or pecans instead of walnuts.

Ingredients:

~ roasted beets, quartered
~ 1/4 cup of thinly sliced red onion
~ handful of toasted walnuts
~ about a cup of fresh arugula
~ pieces of torn brie cheese (President brand from France makes a brie in a new log shape, just slice it!)

Dressing:
~ 1/4 cup of red wine vinegar
~ tbsp of lavender honey
~ a few tablespoons of olive oil
~ squeeze of a lemon, orange or lime

Lay your washed arugula leaves on a platter and scatter the rest of the ingredients over the top.

Whisk your dressing in a small bowl and spoon over the cheese, nuts and beets.

Where can you purchase beets in vacuum packs? They're sold everywhere in Italy but not here and it would save so much time and mess. This is my kind of lunch too - or with goat cheese.

I love the peppery flavor of arugula. When I can, I try to buy golden beets and roast them. Love the clean and simple flavors of the dressing-- not over the top, so that the greens and veggies are the star.
I need to make more salads, like these.

Can you get those beets at TJ's? I think I saw them there. Every conponent in this salad put's a smile on my face!
Beautiful salad. I wish I could learn to like beets. I'm working on it because I don't like to say there's something out there in the food world that I don't like. Besides, they are so gorgeous.
