Labor Day of Love Menu

My husband's brother and family were visiting from California over the holiday weekend.
Here are just some of the things I made for the Labor Day feast. (click on links for recipes).

Corn, Avocado and Black Bean Salsa w/ chips........




Sausage & Peppers..........




Seafood Salad..........




My really good Potato & Egg Salad (I used purple potatoes this time around)........




Cucumber Cups w/ Smoked Salmon Tartare (recipe to follow)...........




Chicken Bruschetta (always a crowd pleaser)............




Fried Eggplant Stacks.............



Summer is officially over. I guess I will have to put away my white pants till Memorial Day!

Wow that was quite a feast you put out. I wouldn't know where to start! They all look tempting. Yes, I'll put away those white pants too.
What a beautiful spread Stace! I could just see their happy faces as they reach for their plates!
My brother-in-law (originally from the fair state of NJ but now lives on Long Island) and his wife are coming to visit in a couple of weeks. I sure hope he doesn't see what you serve to guests, because he isn't going to eat as well here as he would have at your house.

I make a similar salsa but have never included avocado. I'm going to give it a try in mine. The seafood salad is perhaps my favorite but then again, I'm thinking it's the cucumber cups because I can't resist a tartare.

I'm feeling full just by looking at the pictures :-) Did you say Fried Eggplant? ah, my heart skipped a beat. I always chicken out of deepfrying (I always picture myself in the ER with 3rd degree burns, silly me), but if someone does it for me, bring it on!

What would a Labor Day feast be without Sausage & Peppers!!! Great spread Stacey. I'll be checking with you when I start planning my first Thanksgiving in my new house. Everybody and their brother is coming...

Everything looks so good! Your guests must have been impressed! I want the eggplant - actually - I want a bite of everything!
I think you can get at least another week out of those white pants! And, what a feast! Those cucumber cups look like a really fresh appetizer.
