Greek Orzo Salad w/ Shrimp

How easy and delicious is this? Very.

This dish is such a crowd pleaser. Great for a summer BBQ, and you can make this the day before.
Just take out of the fridge about an hour before serving and adjust seasonings.

Greek Orzo Salad w/ Shrimp:

1 box of orzo (cooked per package directions)

1 lb. cooked shrimp (I like to grill mine)
1/2 red onion, sliced or diced
handful of green onions, chopped
handful of kalamata pitted olives, chopped
1 cup of cherry tomatoes, quartered
handful of fresh dill, chopped
handful of fresh parsley, chopped
1 hot house cucumber, sliced
7 oz. container of chopped feta cheese


juice of 2 lemons
1/4 cup of red wine vinegar
1/2 cup of good olive oil
kosher salt and pepper

Once you cook and drain your orzo (about 8 minutes), mix while still warm with some of the dressing.

Toss with the rest of the ingredients and add your feta cheese in last.
This makes delicious leftovers!


I swear you will not believe this! I just had lunch with some friends yesterday and this is what I brought, I made the EXACT same thing! The day before I grilled all my shrimp, then cooked my orzo, stuck it in a ziplock and put it in the frig. Yesterday morning I put everything together. The only thing different I can see was that I added white wine vinegar instead of red. How funny is that? This is delicious people, you must make it! my friends went nuts over it, not one piece of orzo was left!! Stacey are you sure you're not the younger sister I never met???

This is almost exactly the salad that I use for potlucks (everyone says "Hey, bring that orzo salad again!"). I roast the shrimp in the oven w/ olive oil, s & p, and I use brined feta that I cut into cubes. I also use more lemon juice and no vinegar - but I too use the "toss with dressing while pasta is still warm" trick! YUMMY!

Today's Greek lesson is "kritharaki". Kritharaki is a Greek orzo, delicious in a pasta salad with shrimp, like Stacey makes.

Love this salad. I have been making one similar for a few years now - I just never added shrimp, since my "boys" don't like shrimp that much. Now I will have to make some grilled shrimp to add to leftovers for my daughter and I.

I love Greek flavors and your orzo looks SO good with the shrimp and feta - yum!
I've just become an orzo fan. No reason I haven't used it much before but I use it a lot now. Made chicken with orzo out of the new Cooking Light magazine and it was delicious and it also had the kalamata olives and tomatoes.

I don't know if it's a crowd pleaser but it's certainly a Claire pleaser. I was most pleased :-) actually it came second after the torta, but a very very close second.
