Egg Salad Appetizers 2 Ways



Here are 2 easy and snazzy ways to eat your egg salad.

I love egg salad. Love it. I have a secret recipe that I will give out upon request.

You can eat this for lunch (as I did), or serve it as an appetizer for Easter, instead of the typical deviled eggs!

Dare to be different!

These first appetizers can be called involtini, which in Italian usually refers to a meat or fish rolled up with stuffing and then sliced.
You can call these sushi, they certainly look like sushi, and you are sort of using raw fish.
But let's just call them "smoked salmon roll-ups", because really, that's all they are.

Try and find a long piece of smoked salmon, one that you can cut into long rectangles.
Then you can slice them up into perfect little rounds for pretty hors d'oeuvres.
The slices I used for the photos were too short, therefore they came out a bit uneven. (My stomach didn't notice the difference, they still tasted good).

Stacey Snacks' Salmon Roll-ups:

Lay your smoked salmon strips on a cutting board and put a small amount of egg salad on the end of each slice of smoked salmon. You can put some dill sprigs or chives in with the salmon and roll tightly to form into bundles.



Place bundles in the fridge until ready to serve.
With a sharp knife, slice into rounds and place on serving dish. Garnish with snipped chives or fresh dill.



Next on the list are little whole wheat toasts.......mounded with a shmeer of mashed avocado a dollop of egg salad (what is a dollop anyway?) and a teaspoon of caviar (buy the cheapy stuff for this dish). Garnish with chives.

How great do these look? I was planning to make deviled eggs for Pasquetta (Easter Monday) but now I need to go get some smoked salmon too! Please, please I need that egg salad recipe - asap.

Oh My God! LOVE egg salad! LOVE your amazing recipes! I think I would use belly lox for the roll-ups because that salty goodness would play very well with the egg salad (and I adore belly lox). And the avocado/egg salad combination is to die for. You know I'm going to hound you for your secret recipe, don't you?! I didn't realize what a stir I would be causing by writing it's a "secret" recipe.
It's really not!

Here it is............it sounds basic, but it really is the best. Ask my friends, they always request it!

Basic Egg Salad Recipe: (you can add chives, or scallions, or top with caviar, or anchovies).
~ hard boiled eggs, mashed with a POTATO MASHER (important)
~ Hellman's mayo (NO lowfat or Miracle Whip)
~ tbsp of Gulden's spicy brown mustard
~ tbsp of pickle relish
~ salt and pepper

oh i wouldn't know which to choose so i'll just have both... may i?
i know i am going to have tons of eggs left over after tomorrow - the kids tend to love the egg fights, but never eat all of them!

All these words and all I hear is "EGG SALAD." I'm an egg salad fanatic, if there is such a thing. I love the salmon roll ups and they would be so easy to try.

Dollop is a funny word, isn't it?

I'm planning on making tuna salad and egg salad next weekend with my new homemade mayonnaise recipe. I'll be sure to try the potato masher thing.
