BBQ Chicken Pizza


I hate to call this a pizza, because pizza in my world has tomato sauce, mozzarella and maybe some basil.

But for now, let's just call it a BBQ Chicken Pizza.

This is a GREAT way to use leftover chicken. Kids love this too.
I make this as an appetizer in the summer when we are having a BBQ and they fly off the plate!

Use prepackaged tortillas, any flavor will do.

Line your torts on a baking sheet.

Squirt some smokey flavored bbq sauce around the tortillas.



Then layer cooked chicken slices (leftover grilled chicken breasts work best) around the tortilla.

Next layer is thinly sliced red onion (and or sliced red bell pepper).

Now sprinkle with Mexican blend shredded cheese and top with freshly chopped cilantro.
I squirt another round of bbq sauce on top.



Bake in a 375 oven for about 12 minutes until cheese is bubbly.

Slice on a cutting board with a pizza wheel.

You don't have to call it a pizza if you don't want to.

I agree on the quesadilla comment. I do something similar occasionally when I have leftover pizza. always a hit.

Yum! I like the idea of using store bought tortillas as the crust. It's a great shortcut for a weekday meal.

I bet it tasted delicious and that's all that matters in the end, right? I need more recipe like that for last minute guests!

I agree with you. Technically not "pizza" - pizza is cheese and tomatoes (and there is nothing Italian about barbecue sauce!) But looks delicious, whatever you call it.

Dee-lish! To make them low cal/ low fat use the "Flat Out" brand wraps- they are whole grain and about 80 less calories. I'm making these tonight!
