Blueberry Bloggin'



Last week I was inspired by many bloggers and the abundance of blueberries in New Jersey right now, so I made 2 blueberry desserts!

I made a Blueberry Comfort Cake from a fabulous baking blog called Boscoe The Cookie Doctor. This guy can really bake, he intimidates me. The cake came out very good, almost like a giant blueberry muffin.
After giving most of it away to the neighbors and passers by, I made a batch of my once a year blueberry muffins (I don't know why I only make them once a year, maybe because I don't love to bake).
They are lemony and have a wonderful crunchy topping due to the sugar/nutmeg combo.
Here is my recipe. Makes 12 big muffins (I am getting a "muffin top" over the sides of my jeans!).



Lemony Blueberry Muffins

Preheat oven to 375 degrees
1 stick of butter, melted
1 1/2 cup of sugar
1 tsp vanilla
2 eggs
zest of a lemon

Mix all together, then add the following, one item at a time:
2 cups flour
2 tsp baking powder
1/2 tsp salt

After you have incorporated all the ingredients, add 2/3 cup whole milk & a pint or more of blueberries.

Pour into lined muffin tins and sprinkle w/ a sugar/nutmeg mixture (about 2 tbsp of each total). Bake 375 for 25 minutes.

This comfort cake looks so mouthwatering. Would love to try it. But fresh blueberries are quite expensive in Turkey.

100 gr of blueberries from Holland is sold for $8,and same amount of blueberries from Chili is for almost $35 lol

Can this recipe work with frozen blueberries as well as fresh ones?

Hi Banu,
Yes, frozen blueberries will work just fine, since you are baking them anyway! I sometimes use frozen fruit during the winter months when fresh blueberries are out of season. Good luck!

That blueberry cake reminds me of this cake from my childhood. I'm not a blueberry fan in general, but in muffins and that cake, I LOVE THEM!
