Lazy Leftover Lunch



It's Monday. I have to go grocery shopping and do the Monday errands. You know the drill. I have no food in the house, and I'm hungry.
Time for lunch. I am feeling lazy, after all, I did cater a party this weekend, and walk around NYC in the sweltering 95 degree heat, so I don't really feel like cooking today.
What's in the fridge? I have some leftover roasted peppers from Friday night, some great Italian Bufala Mozzarella (see my Mutz & Peppas post) from Thursday that will go bad if not eaten soon, and some nice stale crusty Italian bread.
Spread a little basil pesto (which is always on hand) on the bread, top w/ sliced fresh mozzarella, and top w/ roasted peppers. Put in the toaster oven at 350 for about 8 minutes, until cheese is melting. Top with a fresh basil leaf, and you have the most delicious, easy, summer, leftover lunch!

Inspiration! My husband, David is golfing this evening- I've got Evan(8) and Rosalie(5) parked in front of Disney's Camp Rock and I will sit down to this and a nice cool glass of wine out on the patio.
