Early Morning Potato Salad


Today we are having a party for Independence Day and I like to make my potato salad in the early a.m. (which would be 8:30 a.m. for me). It is tradition, and has to be made while in pajamas. Who doesn't love potato salad? Here is my recipe, I never measure, so just eyeball it and see if it looks good to you.

Net bag of small red potatoes, today I used purple, red & Yukon gold
(wash and cook potatoes until done, about 20 min. with skins on)
4 stalks of celery, chopped
4 hard boiled eggs, mashed, or sliced
Half of a yellow onion, minced
Handful of fresh parsley from the garden

Dressing:
2 large dollops of Hellman's Mayonnaise
2 tbsp of Gulden's Spicy Brown Mustard
2 tbsp of your favorite pickle relish
salt & peppa

If you can handle the hot potatoes, quarter them and mix with all ingredients. I like to mix the potato salad while hot with the dressing. Sprinkle with fresh parsley and refrigerate until ready to serve. It's so good. Happy 4th of July!

Consider yourself blessed having access to this recipe! I have know Sta for 16 years, and she is an amazing 'food artist'. This has been a well kept secret, and I can assure you that it wouldn't surpise me if you found one of your guests hiding in the coat closet with the bowl of potato salad and a fork! It's that good. SWerved it for Mother's Day - by far the best thing served.
