Delicious Tuna Cakes with Capers & Dill


This may not appeal to many of you, but will you trust me?    These are DELICIOUS!   We loved them better than my salmon cakes if that is possible!

This is a weeknight meal that will save you.  Kids love them too.

I use this brand of tuna called Genova Tonno.    Not made in Italy, but the name makes you think that it is.......

I had the opportunity to try a new Lemon with Herbes de Provence variety.  
 It was delicious!   Perfect in a salad or sandwich, and here, using it to create these scrumptious tuna patties......


Try them, I promise you will love them.  

Delicious Tuna Cakes:

2 cans of tuna in oil (I used this brand), drained
1 tbsp capers
big handful of fresh dill
1/2 cup of breadcrumbs (preferably homemade)
2 eggs
1 tbsp Dijon mustard
1 tbsp mayonnaise 
1 tsp pickle relish
juice of half a lemon
a few shakes of tabasco
sea salt & pepper

Mix everything in a large bowl.


Using an ice-cream scoop, plop even amounts of tuna mixture into a hot frying pan coated in vegetable oil (you can also use olive oil).

Cook 2-3 minutes per side.  I find it is best to turn the cakes with a spoon, vs. a spatula.


Let drain on paper towels and dot with your favorite mustard (Schaller & Weber Bavarian is mine!!!).


These are delicious with a salad or on their own!
