Carrot Waffles!


You heard me, I said CARROT WAFFLES.

Why not?  
We have made beet waffles, falafel waffles, sweet potato waffles and any other leftover veg/potato to throw in the waffle iron.

I received Susan Spungen's newsletter with a recipe for ROOT VEGGIE WAFFLES, and knew I had to get to work.

I decided on carrot, only because I had a big bag of them to use up.

These were delicious with maple syrup, and also with egg and avocado.

Try something different!

Here's how I made them:

2 cups of grated carrots (doesn't have to be exact)
1/4 cup milk
1 egg
1/2 cup Parmesan or Pecorino cheese (grated)
1/3 cup flour
1 tsp pimenton (smoked paprika)
chopped scallions
1 tbsp of fresh herbs of your choice (mint, parsley, thyme or rosemary)
salt & pepper

Mix all ingredients in a large bowl.


Make sure your waffle iron is preheated and sprayed with cooking spray!!

Drop the mixture in the device and close the lid for 4 minutes.


The waffles will be nice and crisp.  Serve immediately.
