Potato Salad w/ Hot Smoked Salmon

Many people don't know what "hot smoked salmon" is.

It is fully cured salmon, usually found in the appetizing section of your supermarket or if you are lucky enough to live in NYC, then at Russ & Daughters (the best smoked fish around!).


The salmon has been baked, then "hot smoked"  at a 120 degrees on hardwood.

It is smoky and salty and the idea is that you flake it onto salads or pastas.....or a bagel!  It's so good.  

It usually comes vacuum packed.

Trader Joe's sells a pretty decent hot smoked salmon and the price is always right.

Ok, now go find some!


I found this recipe on A Tasty Kitchen, and I added the dill and capers.......

1 lb. baby potatoes (I love Yukon gold)
3 eggs
1 piece or half pound of HOT SMOKED SALMON (not lox)

Dressing:
1/4 c mayo
1 tsp dijon mustard
1 tbsp capers
1/4 red onion, sliced thin
1/3 c of dill pickles, chopped
lemon zest and juice of half a lemon
s&p
chopped fresh parsley and dill


This recipe is very adaptable, so you can certainly add or omit something.

Boil the potatoes and eggs.  I use the same pot for both.....I cook the potatoes for 10 minutes in salted water, then when the timer goes off, I throw in the eggs and boil everything for another 9 minutes.

While the eggs and potatoes are cooking, make the dressing.


Cool the potatoes and cut into wedges and add the cooled potatoes to the dressing in a large bowl.  

Flake the hot smoked salmon over the bowl and slice the eggs on top.


This is a great spring dish and perfect for Mother's day or Easter.
