Mississippi Vegan's Chickpea & Avocado Salad


Holy Wow, Batman, this is good stuff.

Late night instagram surfing produced this AMAZING lunchbox salad that looks and acts like tuna or egg salad, but is even better and maybe healthier?   Not sure about that, since tuna and eggs are always healthy and a big staple in my diet.

Tim from Mississippi Vegan makes this with Vegenaise mayo and nutritional yeast.....I did not.

I used all the other yummy ingredients, but omitted the nutritional yeast and used my beloved Hellmann's mayo to bind.

Many commenters said they added in smoked paprika (pimenton), which I love!, so I added it in and I highly recommend it.

I loved this so much, and Mr. Snacks never knew he was eating chickpeas in his lunchbox (not that he would've minded, but why tell him).

I made this the night before and it was just delicious the next day....I just zhuzzed it up a bit with fresh herbs before serving.

Good bread is a must.


Chickpea Avocado Salad (adapted from Mississippi Vegan): (makes enough for 4 big sammies)

One 15.5 ounce can chickpeas, rinsed
½ teaspoon sea salt
½ teaspoon black pepper
⅛ teaspoon cayenne 
1 tsp pimenton (optional)
1 clove large garlic, grated on a microplane
½ cup diced celery
1 green onion (scallion) stalk, chopped
2 tablespoon dill pickles, diced
3 tablespoons Castelvetrano olives, diced
¼ cup roasted salted Marcona almonds, roughly chopped (I used roasted almonds)
1 tablespoon minced shallot
¼ cup roughly chopped fresh parsley
¼ cup roughly chopped fresh dill, fresh not dried
2 teaspoons red wine vinegar
2 teaspoons whole grain mustard
¼ cup mayo
1 ripe avocado, diced 

Smash the chickpeas in a mixing bowl with a fork or potato masher, leaving some still in tact.

Add in the rest of the ingredients (except for the avocado) and mix together.  Taste for seasoning.   I upped the sea salt.

Lastly, fold in the diced avocado and voila!  A sandwich filling is born.


Tomato, lettuce, arugula, radicchio, whatever you like goes with this on toast.

This lasted 3 days in the fridge......
