Garlic Shrimp w/ Chorizo & White Beans


It couldn't be easier.    This was Valentine's dinner with some garlic bread I had stashed in the freezer.

I am all about pantry ingredients and having things on hand in the freezer, so I can make a dinner when plans fall thru.

I always have canned tomatoes, different cans of beans and spices in the house.
A bag of frozen, cleaned uncooked shrimp from Trader Joe's and let's go.

Not sure why I haven't posted this recipe before, but instagram followers have asked me to jot it down, so here it is.

Garlic Shrimp w/ Chorizo and White Beans:  (serves 4)

1 lb. frozen shrimp, shells removed and defrosted
1 tsp pimenton (smoked Spanish paprika)
olive oil
3 garlic cloves, chopped
1 can of white beans, drained (but save a tablespoon of the bean liquid for the sauce)
1 small can of cherry tomatoes (I like Mutti from Italy)
1/2 stick of Spanish chorizo, skin removed and diced (I like Palacio from Spain)
big handful of spinach
kosher salt
hot pepper flakes

Defrost the shrimp and make sure there is no ice, and they are nice and dry.
Sprinkle with the pimenton.


In a heavy skillet, heat olive oil and cook garlic for a minute.  Add in the shrimp and chorizo pieces and cook about 3-4 minutes.   Remove the shrimp to a plate.

Add in the tomatoes and simmer about 5 minutes until they are breaking down.
Next, add in the white beans and the spinach.  Season with kosher salt and a dash of hot pepper flakes.


Cook another 2 minutes or so.   Add the shrimp back in and cook everything for another 2 minutes.  You don't want to overcook the shrimp.


Spoon into bowls and serve with crusty bread.

You will look like a rockstar.
