Melon & Radish Salad with Salsa Verde


Those who know me, know I am not a fruit lover (except oranges in the winter, and cherries in the summer).

I saw an instagram post of pairing cantaloupe melon with radishes and pistachios....ok, I was intrigued.   Some Parmigiano Reggiano slices on top.....even more intrigued.

I created this beautiful and delicious salad, and topped it with a salsa verde (that I had used for another recipe, of course!).

This was not only beautiful, but so delicious, I have made it 3 times already.

If you can't find watermelon radishes, then use regular radishes, they create the crunch and spiciness and a nice contrast with the sweet summer melon.

Here is how I made it:

Ripe cantaloupe, cut into thick slices (or chunks)
1 watermelon radish, sliced
1 shallot, sliced thin
chopped pistachios for the top
Shaved Parmigiano Reggiano cheese

Salsa Verde:
handful of basil, parsley and any other green herbs you like
1 anchovy
1 tbsp capers
3 tbsp olive oil

whiz the salsa verde in a small food chopper and set aside in a bowl.  

Assemble the melon with radishes on a platter, scattering the sliced shallots on top.


Next, drizzle the salsa verde over the platter and garnish with pistachios, the cheese and fresh basil leaves.

This is so refreshing, perfect for summer entertaining.  Enjoy.
