Lunch on the Fly: Orange, Pistachio & Mozzarella
I like to be creative and surprise people by making something different, something they might not of thought of.....
Here, I had fresh mozzarella in water (easy to find in NJ). You can also use burrata.
I chopped about 1/3 cup of pistachios roughly, and placed them in a bowl with 2 tbsp of honey and enough olive oil just to loosen up the mixture.
I peeled and sliced 2 navel oranges, and arranged them around each mozzarella ball.
Drizzled some of this yummy, gooey honey nut mixture over the cheese and sprinkled with some smoked salt.
Lunch was served, and it was delicious!
This is going in the rotation before tomato season starts!
