Easy Dinner: Nigel Slater's Roast Cod w/ Caper Anchovy Paste


I love an easy go to weeknight recipe even when we are not stuck inside.

This recipe is gold!

English cook, Nigel Slater posted this simple fish recipe in the UK Guardian and I knew I had to make it.

He suggests using a thick piece of cod, but halibut would also be a good choice. (my piece of fish wasn't 1" thick, so I reduced the roasting time a bit).


Truthfully, this paste would be great on big prawns or even scallops.

I'm in love.

Here's how:

In a mortar & pestle (or mini chopper), mash 3 garlic cloves with a half can of anchovy filets, making a paste.


Add in 4 tbsp olive oil and 2 tbsp capers (I mashed some of them just for the hell of it). Add in fresh thyme leaves from 6 sprigs of thyme.

Lay your fish in an oiled roasting pan and pour this yummy stuff all over the fish.


Depending on the thickness of the fish, roast in a 450F oven for 15-20 minutes, until you have a nice golden crust.

After you take it out of the oven, squeeze some lemon juice over the fish.

Serve w/ steamed broccoli or green beans.

So good.
