Winter Only: Citrus Salad w/ Shrimp & Avocado


This is a wonderful salad, that should only be eaten in winter, when citrus is beautiful and much welcomed!

There's no real recipe, so I will just list the ingredients I used.

I boiled frozen shrimp with tails on for 5 minutes (I didn't bother to defrost them). Make sure you run them under ice cold water to stop the cooking process.

Layer clementine, pink grapefruit and blood orange slices around a platter.

For greens, use arugula, radicchio and thinly sliced fennel. I also sprinkle with fennel fronds.

Cut up an avocado and sprinkle with sea salt.

Scatter the cooled shrimp and sliced avocado on top.

Dressing:

1 tbsp of sherry wine vinegar
1 tsp honey
3 tbsp good olive oil
sea salt & pepper

Whisk dressing ingredients with a fork until emulsified and drizzle over the salad just before serving.
