Alison's Fantastic Brown Butter Salmon
I'm sorry to promote yet another cookbook, but when it's good, I want to share with you.
Alison Roman's new book NOTHING FANCY is very good.
I have liked everything I have made so far. Most dishes are no brainers, non fussy, and good enough for weeknight or entertaining.
I am going to just put this out there.....this is the top 5 salmons I have ever made, and I mean ever.
It is SO GOOD.
It has all the flavors I love, and is so simple.
I think this is the best salmon dish to serve for company, because you can bake it, then serve it at room temp if necessary.
It would be a good brunch dish too...sort of has a bagel and lox flavor profile.
I omitted the sesame seeds, because they have been getting stuck in my dental work lately, and it's very annoying.
Sorry to share that information.
I also made it with my favorite steelhead trout, which is milder than salmon, if you can find it (Costco sometimes has it).
Just cut down on the butter if you are using a smaller piece of salmon....and increase if you are making this for a party.
Here's how to make Alison Roman's Brown Butter Salmon: (adapted from NOTHING FANCY)
2 lb. piece of salmon (I always keep skin on)
1 lemon sliced thin
1/2 red onion, sliced thin
kosher salt & pepper
6 tbsp of butter (I used less)
1/4 c olive oil (I used much less)
2 tbsp capers
small bunch of fresh dill
toasted sesame seeds (optional)
Preheat oven to 325F.
Lay the piece of salmon on a baking sheet or low sided casserole dish.
Season the fish liberally with kosher salt & pepper.
In a heavy skillet (I love my all-clad stainless), heat the butter and olive oil and cook the lemon and HALF of the onion slices until getting caramelized. Add in the capers the last minute or two.
Pour this sizzling brown butter mixture over the salmon and place in the preheated 325F oven to bake.
Alison wants you to cook the fish 12-15 minutes, however, I like my salmon cooked thru, not translucent in the middle, so I cooked mine for 20 minutes. (I will leave that up to you....personal taste).
Remove the fish to a platter and scatter the other half of raw onion slices and fresh dill on top. You can also add the toasted sesame seeds if you like. Squeeze some lemon juice all over the top.
This was fantastic.
I served it with steamed broccoli with lemon.
