Easy Shrimp & Asparagus in Foil Packets
I am running out of dinner ideas, but then I remember to make these foil packets for dinner, and I am happy again.
The salmon foil packets are the best, however this easy shrimp version was just as good, if not better.
I always keep frozen shrimp in the freezer for weeknight meals like these.
We liked this method so much, sort of like a shrimp scampi.....I served the packets over jasmine rice, but they were great served on their own.
I've included 2 methods in this post:
The first one, steaming everything in tight foil packets (title of the post).
Whatever you cook in foil, stays nice and moist and will steam the food. The colors stay nice and bright.
The 2nd method I cooked the same ingredients without a packet (because I ran out of foil!), which was still delicious, but the shrimp and asparagus had more of a "roasted" look.
Here's how to cook them both methods:
Foil packet method:
Lay out 2 sheets of heavy duty foil on a baking sheet.
Place defrosted frozen shrimp along side thin asparagus spears in the center of the foil. Sprinkle with kosher salt and pepper.
Next step: add sliced garlic (or minced) to the packet (about a clove of garlic per packet).
Lay a lemon wedge on top, and drizzle with a few tablespoons of white wine (chicken broth will do as a substitute for the wine).
Lay a generous pat of butter on top of each packet (I used Kerry Gold salted butter) and fold up to make a nice tight packet.
Bake in a 425F oven for 12 minutes (remember to use thin spears of asparagus, so they cook at the same time as the shrimp).
If you are using a grill vs and oven, then grill on high for 8 minutes.
Carefully open packets and squeeze some extra lemon juice on top.
Serve over white rice or on its own. Garnish with fresh parsley before serving.
Nice and easy and really yummy.
Without foil packet method:
The second time I made these I was out of aluminum foil (hard to believe), so I made the shrimp and asparagus in individual oval casseroles.
I took the liberty of sprinkling seasoned panko over the shrimp the second time around.
These were just as delicious as the foil packets! I baked them at the same temperature as the foil packets for the same amount of time (425F for 12 minutes).
