End of Summer Random Bites

Hurry up and get them before you have to put a sweater on.

Last call for corn and zucchini. I'm still able to find some at the NJ farmer's markets, but not for long.

I made this delicious flatbread pizza with roasted zucchini and caramelized onions. A layer of ricotta with lemon zest makes this end of summer pizza the best.

If you can still get some plums and nectarines, make this simple crumble.

The topping has cardamom and pistachios and is super easy.

and probably the best thing I made this summer was from NY Times food editor Emily Weinstein's instagram (@emweinstein), GREAT idea for corn scrambled eggs.


Scrape the kernels off 1 ear of corn and saute the kernels in some butter.

Whisk 2 eggs and mix them in the frying pan w/ the corn. Toss until nice and fluffy.

Season w/ salt, pepper, chives and snipped basil.
I could eat this everyday.
