Tuscan Tortellini & Bean Soup


This recipe is for one of those rainy chilly nights.....you probably have everything in the house to make this.

It's so hearty and delicious. What else can I say about it?

I am getting tired of cooking in the winter.....I am ready for some produce and some sunshine.

This is the perfect February food.

Not sure why they call this a "Tuscan" soup......but just go with it, because it's easy and good.


Tuscan Tortellini Bean Soup:

2 good quality Italian sausage links, cut into pieces
1 small onion, chopped
4 cloves garlic, chopped
14 oz. can of chopped tomatoes
4 cups of chicken broth (Swanson's 33% less sodium is my choice for this recipe)
1 package of your favorite tortellini, fresh or frozen
can of small white beans, drained and rinsed
1 cup of fresh leafy spinach, torn
hot pepper flakes
parmesan cheese

In a large Dutch oven, heat some olive oil and cook the sausage pieces with the onions for a few minutes until sausage is cooked thru.
Add in the garlic and cook another minute or so.

Next add in the tomatoes and chicken broth. Bring to a boil and add in hot pepper flakes.
Add in the tortellini and cook the pasta as per package directions.

Last, add in the beans and spinach and cook just another minute.

Ladle into bowls and garnish with parmesan cheese.


I can't wait for longer days so I can take pics with natural light.

Trader Joe’s has dried tortellini in their pasta department. Would that work? Fresh or frozen probably better?

This is one I’d like to try. After 80something days, it turned cold yesterday.

Any tortellini works......I use Giovannia Rana fresh tortellini...I LOVE them! but frozen is great too.

Giovanni Rana products are at stores all around us…supermarkets…even Smart & Final and Walmart!
