Sausage Tray Bake
Here is a great, easy weeknight dinner that you can prepare in the a.m., and pop in the oven when you get home.
You can use ANY vegetable you like......and any type of sausage, turkey, pork, whatever.
The idea is to make a one pan tray bake, laying the sausages on top of the vegetables.
Sausage Tray Bake:
1 lb. good quality Italian sausage (I use pork fennel from my local butcher), turkey or chicken sausage is fine
1 lb. of any potato (sweet potatoes are extra good here), cut into quarters
1 lb. of Brussels sprouts, trimmed and cut in half
1 red bell pepper, cut into 1" pieces
1 large yellow or red onion, cut into wedges
kosher salt & pepper
fresh thyme or rosemary sprigs
Lay some foil on a baking sheet and place the potatoes and vegetables together on the pan.
Drizzle liberally w/ olive oil, kosher salt & pepper and mix the potatoes, onions and other things together to coat.
Lay the sausages on top of the vegetable mixture and arrange fresh herbs around the pan.
Now you can place in fridge until ready to bake.
400F for 40-45 minutes should do it. I like to splash w/ a tiny amount of balsamic vinegar right out of the oven.
This is also great to serve for a crowd, just double the recipe on 2 sheet pans, and serve right from the pan.
