A Great Little Apple Cake w/ Apple Butter Icing


How many recipes for apple cake must one make before she/he finds the best one?
Many.

I still haven't found my favorite, though this comes super close, because it's so easy, and I can just whip it up, using only 1 large apple and 1 egg. No butter, just a little olive oil.

It's moist and fabulous, nothing much else to say, except oh yeah, it has booze in it too.

You can make an icing if you like, or leave it naked.
This time I swiped it with some apple butter, and boy, was it good.

This makes a very small cake, enough for 6 slices only (4, if you like a big piece!).


A Great Little Apple Cake w/ Apple Butter Icing:

3/4 cup sugar
1 egg
1/4 cup mild flavored olive oil (I use Colavita)
1 tsp vanilla
2 tbsp of bourbon or booze of your choice
1 tbsp of heavy cream or whole milk
1 tsp baking powder
1 tsp cinnamon
pinch nutmeg
1 cup flour
1 large Granny Smith apple, peeled and cut into chunks
1/4 cup of chopped walnuts
apple butter for the top if desired (and I desire!)

Oven at 350F.

Grease a 7-8" springform or deep tart pan with removable bottom (a 9" regular size cake tin is too big).

Mix all the ingredients together, it doesn't matter in what order, trust me. The batter comes together very quickly.

Spread the thick batter into the greased tin and bake for 35 minutes, until golden.

You can sprinkle powdered sugar on after it has cooled, or spread some apple butter over the cake while still warm.


This cake is excellent warm or cold. It's the perfect apple cake.

Just winging it here, but I don’t have a small pan.

Would it work in a loaf pan - I have several in different dimensions - and then be cut in crosswise strips???

Use a Pyrex pie plate.....it's a good size. Not big enough to fill a loaf pan.
