Cedar Plank Salmon w/ Brown Sugar & Mustard


This is one of my favorite salmon recipes, and I make it in the oven all the time.

It's one of the easiest recipes I know and best served on white rice with steamed vegetables for a quick, healthy weeknight dinner.

This time, I decided to try the recipe for the grill on a cedar plank, instead of heating up the oven which I rarely do in the summer.

It came out delicious!

Served along side my favorite green bean and roasted potato salad (recipe here), it was a winner.

You can purchase cedar grilling planks online at amazon, or my local supermarket Kings sells them in packages at the fish counter.
Make sure you soak the wood planks for at least 2 hours, or they will go up in flames on the grill!

This recipe serves 2 people, but it's great for a crowd.
Just increase the mustard and sugar amounts and grilling time will be longer for a bigger piece of fish.


Cedar Plank Salmon w/ Brown Sugar & Mustard (adapted from the New York Times):

1 lb. piece filet of salmon
cedar wood plank, soaked in water for 2 hours at least
1 tbsp of Dijon mustard or grainy French mustard
1 tbsp brown sugar
fresh chopped dill or rosemary
kosher salt & pepper

Lay the fish on the wood plank.

Mix the mustard w/ the brown sugar and spread on top of the salmon to evenly coat.
Sprinkle w/ kosher salt & pepper and fresh herbs.


My grill has a thermometer because it is infrared, so that makes it easy. If you don't have a thermometer, preheat the grill to medium high. You want it to be about 450F.

Lay the plank in the middle of the grill and close the lid.
My 1 lb. piece of salmon usually takes 18-20 minutes.

I turn off the grill and serve the fish directly from the board. Discard the board after serving.

Yummy summer food with potato salad or green bean salad.

Easy!
