Sweet Potato Waffles


Yes, this waffle thing is still going on here.

I am putting everything and anything in the waffle maker.

This is a phase, so please indulge me.

Here I tried my hand at sweet potato waffles.
Not hash browns, but more of a traditional waffle that puffs up and you can eat w/ maple syrup.

I shredded the sweets, like I would for potato pancakes. A bit of a challenge getting them to look nice, but they turned out delicious.

The next time I have a leftover cooked sweet potato, I will try it mashed instead of the shredding.
Either or, I loved the taste.


Sweet Potato Waffles: makes 4

1 large sweet potato, peeled and grated (or a leftover cooked sweet potato, mashed)
2 scallions (green onion), chopped
3/4 cup flour
1 tsp baking powder
1 egg
3 tbsp melted butter
1/2 cup of milk
inch of salt & pepper

Add all ingredients to the grated sweet potatoes in a bowl.

Preheat and spray the waffle iron liberally w/ non-stick cooking spray.

Spread the batter evenly onto the waffle press and close the lid.


Cook about 7-10 minutes (these take a bit longer than the usual waffles).

They may not be perfect squares, but they taste delicious!

LOL! I'm so far behind in catching up on blogs. You're on a waffle iron kick? Me too! Omelets are fun to make, this way, I discovered. I love me some sweet potato, so thanks for the inspiration.

Boy, have I been repressed. Just using Krusteaz’s very good Belgian Waffle Mix. Full Stop. Did see an interesting thing last November about leftover stuffing as waffles, but, ever gutless, I didn’t try it. Now I’m wondering what I’ve been missing!
