Seared Salmon on Grilled Radicchio & Endive


It's almost bathing suit season, sorry to inform you.

This is the perfect dish if you are watching your carbs and calories, and there is nothing really to it, though it looks fancy.

I recently ordered 10 lbs of flash frozen fish from Alaska. 5 pounds of Alaskan King salmon and 5 pounds of Alaskan wild halibut.

I need to come up with some recipes for this beautiful bounty and get back to my summer figure.


Here, I grilled some winter radicchio, red onion slices and halved endive in an oiled grill pan and splashed w/ balsamic vinegar and sea salt after the vegetables were wilted.


Once the radicchio is cool enough to handle, chop it up and add it to a bowl with a can of drained white beans. You can leave the endive spears whole for decoration. Season w/ sea salt & pepper and a bit more balsamic vinegar.

Arrange the salad nicely on a platter and place a piece of seared wild salmon on top. Drizzle with some "out of fashion" (not that I care) balsamic syrup.

That's it.


Eat it and watch the pounds melt away.

I ordered from Captain Jack's Seafood Locker.
The fish is a bit pricey, but worth it.
