Chocolate Chunk Muffins w/ Chocolate Drizzle Icing


The cute kid across the street requested that I please bake him "chocolate chip muffins", they are his favorite.
Ok, why not? I like cute kids and I like muffins.

These are the easiest muffins to bake, nice and moist.
You don't have to get fancy w/ the chocolate drizzle, but why not?

Chocolate Chunk Muffins: makes a dozen muffins

2 cups all-purpose flour
1 tbsp baking powder
1 tsp baking soda
pinch salt
1/2 cup unsalted butter, melted and cooled (one stick)
1 cup granulated sugar
2 large eggs
1 cup whole milk
1 tbsp vanilla
1 cup chocolate chunks (I chop a bar of 72% Trader Joe's dark chocolate from a 1 lb. bar)

Mix the dry with the wet.....this is not a complicated recipe, obviously.

375F oven.

Bake 20 minutes.

Melt some of the chocolate chunks in the microwave for about 45 seconds. Stir until smooth and drizzle over the muffins.


Let completely cool and harden in the fridge if doing the drizzle thing.

This made one very happy 5 year old.

That is the GREATEST chocolate - and what a price (less than $5 for a pound plus bar). Love it for cooking and for a therapy chunk for the cook at around 3PM.
