Another Apple Cake: with Olive Oil & Raisins
I never tire of apple cakes, and there are so many still on my list that I have not tried yet!!!
You know I love olive oil in cakes, it's just easier than creaming butter! (and healthier??).
Here, I made an apple raisin loaf, using olive oil and yogurt.
This was moist and delicious, and please don't tell me you hate raisins.
*If you don't have raw sugar, then use regular white sugar, but cut it to 1 cup.
Apple Raisin Loaf w/ Olive Oil:
1 1/2 cups of raw sugar (turbinado sugar) see note above *
2 eggs
1/2 cup olive oil (use a mild tasting oil, I use Colavita)
1 cup of full fat yogurt or buttermilk
1 tsp vanilla extract
zest of a lemon
2 cups flour
1 1/2 tsp baking powder
pinch of salt
big handful of raisins
2 small apples, cored and sliced thin (I leave skin on, but you don't have to if they are not organic)
Butter a 9" loaf pan.
Mix the sugar w/ the eggs, buttermilk, vanilla, oil and zest.
Add in the dry ingredients and raisins and mix to make a batter.
Spread batter in prepared loaf pan and arrange apple slices however you like. I used Granny Smith and Gala.
Bake in a 350F oven for 50 minutes.
Let cool in pan 15 minutes before inverting onto cooling rack.
This is best the next morning, as many loaf cakes are.
GREAT for breakfast.

Yes, I liked the apples this way, very pretty....but feel free to dice the apples so they are evenly distributed!
