Grilled Shrimp w/ Watermelon Salsa


Who doesn't love refreshing watermelon?

It's not just for picnics anymore.

I've been using it in savory salads w/ feta and olives and herbs for the last few summers.
I guess watermelon is trendy now?

Here, I made a watermelon salsa, or pico de gallo to go w/ grilled shrimp.


You can add a mango and serve this with tortilla chips, or on arugula and toss for a delicious summer salad.

I served them in verrines for a summer luncheon appetizer, and they were amazing.
Easy too.


Grilled Shrimp & Watermelon Salad:

1/2 watermelon, seeded and cut into small dice
1/2 red onion, diced
big handful of yellow cherry tomatoes, quartered
1 yellow bell pepper, diced
big handful of scallions, chopped
1 tbsp cumin
shake of cayenne pepper or a jalapeno, minced
juice and zest of a lime
lots of fresh cilantro

Shrimp:
1/2 lb. jumbo shrimp, peeled but tails left on
shake of cumin
1 tbsp lime juice and zest
drizzle of olive oil

Marinate the shrimp for only 5 minutes, or the lime juice will start to cook the shrimp (like ceviche).

Mix the watermelon salad together.


You can make ahead and refrigerate.


In a skillet or grill pan, cook the shrimp for 2-3 minutes on each side.

Serve the warm shrimp on top of the watermelon salad.


Garnish w/ more fresh cilantro.

Love it.

I love the watermelon salsa with shrimp, but have a couple of questions. How many does this recipe serve? and when you say a half of a watermelon, I'm assuming you mean one of those small, round ones---not one of the large, traditional oblong ones?

I don't measure, and it really doesn't matter if you use more of this or that in this recipe.
I put one shrimp in each glass, but you can serve them in bowls, and put 4 shrimp in each bowl if you like!

The salsa makes enough for at least 4 people, with the 1/2 lb shrimp.

quick question ...have you ever tried a resteraunt in NYC called Il Buco on Bond Street?? looks right up your alley thought I would mention it. Can't wait to go myself.....very rustic and lovely!

Wow! Yes i missed that one, thanks so much for the link! Friends we know just got married there!!
By the way the pic of the marble cake with ice cream on instagram is insane!!!! Looks outrageous and looks just like the one i make by Laura Vitale which is a receipe from her aunt in Italy. It is my favorite cake! Did you use melted chocolate in your recipe??
