Grilled Flatbread Pizzas


Summer is my favorite food season. There are so many wonderful things to cook that I never think about when it's cold outside......all the fresh local fruits and berries; Jersey tomatoes and mozzarella; potato salads; fruit cobblers; I could go on and on.

And summer is definitely for grilling. I hate lighting the oven and heating up the kitchen in the summer.
I use my gas grill almost every night in the summer.

I make these pizzas all summer long on the grill, and you don't have to bother making real pizza dough.

You can top flatbreads with anything and everything. The kids love them, and they are so easy to make.


I buy these delicious, all natural, Middle Eastern lavash flatbreads and lay them on sheet pans.

Let's call them flatbread pizzas, shall we?

Grill a whole bunch of eggplant, zucchini, red onions and bell peppers. Any vegetable will work.


Spread some basil pesto on the flatbread and top w/ the grilled vegetables. Dot pieces of mozzarella cheese (preferably the fresh wet kind). Throw on some fresh basil leaves and a drizzle of olive oil.

My second pizza had spicy soppressata, fresh ricotta, mozzarella, hand crushed red and yellow cherry tomatoes and oregano flowers, drizzled with olive oil.


Place your sheet pans on a hot grill. Turn the heat down to low and close the lid.
Cook about 10 minutes, keep an eye so the bottoms are not burning.

Carefully remove the pizzas (those pans are very hot) and cut into slices.


Delicious. Have a pizza party and enjoy!

Central Market in New Providence has all different kinds of wraps and lavash and flatbreads. These are all natural (3 ingredients) and very large......I believe a Middle Eastern brand.
They come 6 to a package.
