Cherry Cake w/ Frozen Cherries


I love fresh cherries, which are in all the farmers markets right now, but what will I do when cherries are out of season?

Who knew that you could buy delicious frozen cherries and when you defrost them, they taste like fresh in season cherries!
(you probably knew this already).

I bought Trader Joe's frozen cherries just to try them, and I am running out to buy more, cause they were that good (unlike TJ's disgusting frozen slimy figs).

I made Martha's frozen cherry cake and added a bit of my own twist.

This was a wonderful, simple breakfast cake, and would be great with any fresh berries that are in season.

Frozen Cherry Cake (the cake is not frozen, only the cherries are) adapted from Martha Stewart:

8 tbsp butter, softened
1 cup sugar
1/4 tsp almond extract
3 eggs
1/4 cup sour cream
1 cup flour
1/4 cup almond meal or almond flour
1 tsp baking powder
pinch of salt
12 oz. bag of defrosted frozen cherries (pat them dry)
sliced almonds for the top (optional)
sugar for the top

Cream the butter with the sugar, eggs, extract and sour cream.

Add in the flour, baking powder, salt & almond meal.

The mixture will be nice and fluffy and yellow.

Pour into a buttered 9" pie dish and dot the top with the defrosted cherries.
Sprinkle with dew (I mean almonds) and a tablespoon of sugar for the top.

Bake 40-45 minutes at 350F.

Let cool and enjoy!

PS this cake freezes well too. I took it to the beach and it lasted for days.

Oh Stacey - I've been waiting for you to post this since I bought those cherries at TJ a week or two ago. This looks like a winner.
