Chopped Salad w/ Apples, Walnuts, Arugula and Bacon


Chop Chop.

I love a chopped salad. It's a big mess of whatever you want, cut into small pieces.

Here I made a version of Ina's Cape Cod Salad, using feta, walnuts, apples & bacon.

Use any lettuce you like, Romaine is also a good choice.
and a fried egg on top is always a great choice.

Chopped Salad w/ Apples, Walnuts, Arugula & Bacon:

big bunch of arugula, chopped
1 apple (I like Gala), skin on, cut into small dice
handful of toasted walnuts
4 slices of good quality bacon, fried crisp and cut into dice
handful of feta, gorgonzola or blue cheese

Dressing:

1 tbsp cider vinegar
1 tbsp grainy mustard
1 tbsp maple syrup
3 tbsp olive oil
sea salt & pepper

You know what to do.

Whisk the dressing with a fork and chop away.
Mix everything together with the dressing and plate, or eat from the bowl (like I do!).

Looks like a perfect salad for a wintry day! A few years ago, I bought myself a chopper which I love - and will use for this salad also.

I love chopped salad, too. A good workout for your knife skills. My latest thing is to matchstick both apples & radish - they look so purty! Ina was on Leonard Lopate's show last week - delightful! She's coming out w/a new cook ahead cookbook. Amusing to hear her talk about her mother who was a dietician. Once Ina was let loose in the kitchen, she merrily proceeded to break every rule she ever learned from her mom. Ina herself can't believe the amount of butter in her brownie recipes.
