Good Stuff: Brussels Sprouts w/ Apples & Walnuts


It's hard to believe that Brussels sprouts can be this good, and that eveyrone loves them now, considering they were on the most hated list my whole life.

My how things have changed.

This side dish is up there with my Roasted Brussels w/ Grapes recipe. It's that good.
I might even like this one better.

This is a great Thanksgiving side dish, and super easy.

Roasted Brussels Sprouts w/ Apples, Onions & Walnuts:

3 cups of Brussels sprouts, trimmed and cut in half
1/2 cup of walnuts
2 apples (I leave skin on), cut into chunks
2 small yellow onions, cut into chunks
olive oil
kosher salt
1 tbsp maple syrup

Lay the sprouts, apples, onions and nuts on a baking sheet.
Drizzle with olive oil and sprinkle w/ kosher salt.


Roast in a 400F oven for about 20 minutes, until sprouts are browning.

Remove from the oven and drizzle a tablespoon of maple syrup over the dish while still hot.

Toss and serve in a bowl.

The leftovers are delicious the next day mixed with some quinoa for lunch.

Enjoy and eat your vegetables.

It's funny about the popularity of brussel sprouts. My mother never cooked them. The first time I was introduced to them was in the cafeteria at college. Definitely not a good first date experience! Now when I make my own, I love them.

Roasting them really makes them so delicious, but I've never added the apples and other ingredients. That would be as good as eating candy.

2nd winner I've made this week from your blog...next time will make my apple chunks bigger as they turned to mush but this still tasted great!
