Easiest Best Salmon Recipe


When a title says "The Only Salmon Recipe You'll Ever Need", I'm in.

When salmon is good, it's very good, when it's bad, it's nasty.

Salmon that is smelly, slimy, sitting in the fish case too long can be an ugly thing.

However, if you buy your fish from a reputable fish monger, then most likely you love salmon.

I buy sustainable salmon that is organic (preferable from Alaska and the Pacific). I buy a whole piece, never pieces that are pre-cut, and I always ask my guys what is freshest that day (if it's not the salmon, then I will buy cod or halibut or something else).

This might be the last salmon recipe you will ever need, but you know I will be posting many more.
Don't want to get bored eating the same thing, do we?

Last salmon recipe you will ever need: (adapted from The Huffington Post) serves 2

16 oz. salmon filet (skin removed by your fish monger)
kosher salt & pepper
olive oil
1 lemon
1 tbsp of freshly chopped parsley
2 small leeks, sliced thin

Here we go.

Preheat the oven to 425F.

Spray a piece of aluminum foil with PAM and place the salmon filet on top of the foil (you can also cook this in a gratin dish, sprayed w/ cooking spray).


Sprinkle the fish liberally with kosher salt & pepper.

Throw the chopped parsley on top.
Next, scatter the sliced leeks on top.
Drizzle with olive oil.


Squeeze a lemon over the pan. I think next time, I will also do a splash of white wine.

Roast in the oven for 15 minutes.

The leeks on top will nice and brown and there will be some juices around the fish.

Voila! An elegant, delicious, super easy dinner is made!

I love simple fish recipes like this one. We are big salmon eaters in my family - even my daughter who does not like fish, eats salmon, because it is least "fish-like" according to her.

I agree with you, that buying salmon at a fish market is best. I'm lucky enough to buy all my fish at Freeman's in Maplewood and don't mind giving them some advertising here. They have a nice variety on a daily basis, are smart & knowledgeable & even have a sense of humor. They will set fish aside for you if you call ahead & all their fish & shellfish is fresh & very tasty.

Love salmon! I bet this would be delicious with some cherry tomatoes tossed in there too!
