What's for Lunch? Spicy Chicken Quesadillas


Leftover chicken is a beautiful thing.
I think I like it more than the original dinner from the night before.

This meal is a Trader Joe's sort of deal.

The spicy tortillas are from Traders, as is the corn salsa and the Mexican cheese.

This is one of my husband's favorite lunches.

Here's how:

Lay out some tortillas and sprinkle some leftover cooked chicken on one half of each.

Top with some chili corn salsa, shredded cheese, and fresh cilantro.


There are no rules, you can use onions, peppers, and tomato salsa if you like. Use what you have.

Fold each tortilla over, to make a half moon.

Fry in a nonstick skillet with some oil for a minute or two, then flip over to melt the cheese and cook the other side.

Slice into thirds and serve.


This is a good kiddie meal too.

I'll have to look for those spicy tortillas, sounds yummy and I never noticed them there. I love leftover chicken too, I just made some spring rolls with mine the other day.

A few years ago, you blogged about this corn salsa and I've been buying it ever since. My husband loves it, and it does pack some heat. TJ's Mexican cheese is something I try to keep on hand, for quick dinners, like this one. Looks fast and delish. But you know me. I love Mexican food.

Haven't seen these spicy tortillas at TJ but will look for them next time. I love most of the ingredients at TJ's and quesadillas are something my HS senior daughter loves to make when she comes home for lunch. She's been making the same old ones, so this one will offer her some variety & taste. Mmmm..
