Winter Sides: Cauliflower, Sweet Potato & Sage


Winter doesn't have to be a boring season for vegetables.

I love root vegetables and there are plenty of other winter vegetable options.
Carrots, sweet potatoes, turnips, cauliflower, parsnips, Brussels sprouts..............


There will be tomatoes and asparagus soon enough (well, not that soon!).

This is the perfect side dish to a roast chicken or turkey, or with a dollop of Greek yogurt for lunch and some pomegranate seeds sprinkled on top.

It is low in carbs and high in vitamin A and fiber.

This makes a nice lowfat lunch for me.

Don't forget the cumin, it makes this dish sing.


Roasted Sweets & Cauliflower w/ Onion & Sage:

1 head of cauliflower, cut into florets
2 sweet potatoes, peeled and cut into chunks
1 large red onion, cut into chunks
handful of fresh sage leaves
olive oil
kosher salt & pepper
1 tbsp cumin

Toss all the ingredients together in a 9" x 13" roasting pan (Pyrex is fine).


Drizzle all over with olive oil, coating everything.
Sprinkle with kosher salt, cumin and black pepper.

Sprinkle the sage leaves on top.

Bake for 40 minutes in a 375F oven, tossing once after the first 20 minutes.

Even without the cumin, I'd love this dish. Winter veggies are so under appreciated. But the addition of cumin is a delicious one.
