What's for Dinner? Fish Wrapped in Prosciutto w/ Fried Basil & Roasted Onions


I have been eating so much fish for dinner, I might swim away.

I used halibut here, but please go ahead and use cod if you like.

This was a last minute dinner rescue when I had no ideas of my own and needed to use some beautiful fish I bought the day before.

That's what cookbooks are for.
Open them up and look in the index, you might find something you like, as was the case here.

Of course I had to add sliced Yukon golds, because everything is better with potatoes.

I loved the fried crispy basil here.

Fish Wrapped in Prosciutto w/ Fried Basil & Roasted Onions: (adapted from Rozanne Gold's Radically Simple) serves 2

2 pieces of cod or halibut, about 8 oz. each
olive oil
kosher salt & pepper
1 large clove garlic
handful of basil leaves
2 slices of prosciutto
1 red onion, cut into slices

Season the fish with kosher salt & pepper and wrap each piece with a slice of prosciutto.


Lay the fish in a pan on top of the sliced onions.

Mince the garlic and mix with about 4 tbsp of olive oil.
Brush this garlic oil over the fish.

Roast in a 450F oven for 10 minutes.

While the fish is roasting, fry the basil leaves in the remaining garlic oil until crispy.

Remove the roasted fish to plates and garnish with the fried basil leaves.
