Eggplant Salad w/ Mint, Scallions & Feta


I'm addicted to these Japanese eggplants.

They are so compact and pretty. They have no seeds, so no bitterness.

My husband does not like eggplant because it makes his tongue burn, I think he's allergic to the seeds?

When I was a teenager, my friend Missi used to say the only good eggplant is the kind that makes your gums tingle, in a good sort of way.

Do you know what I am talking about?


I like to grill them w/ some kosher salt and splash them with balsamic vinegar while still warm and they are so sweet and sticky.

This is a perfect, simple summer eggplant salad.

You just sprinkle some kosher salt on the halves and drizzle w/ olive oil.

I grill them on my gas grill on medium until they get nice and soft and charred, along side some big fat scallions from my garden.


I cut them all up while warm and toss them w/ some fresh lemon juice and mint leaves. Sprinkle some feta cheese on top.

Nothing else is needed except a fork.


Yummy stuff.

great recipe , however I am little confused by what is a japanese eggplant. I thought they were the long skinny light purple ones .... and they are more sweet tasting than the regular eggplant.

I said that the Japanese variety are smaller and less bitter. No confusion. I like them better than the bigger Italian variety

OMG I am sorry, that is what I read but then I saw the traditional eggplant ..... hence confusion that reigns when you reach a certain "ahem" decade ..... :-))

I have never noticed a tingle on my tongue or gums while or after eating eggplant. Will have to grill one soon. I use my panini press to grill veggies and it works perfectly. This salad looks yummy.

PS.....you can also use regular Italian eggplants for this recipe if you like!

My gums burn too after I eat eggplant, I thought I might be allergic, so I stay away! hmmmmmm.

I've heard that same complaint about eggplants, but fortunately, I don't suffer from it. The ones in my garden are still not ripe enough, but I'm actually going to get some today from my dad's garden. I love the simplicity and clean flavors of this recipe.

I think eggplant allergies are pretty common...and yes the tongue numb/burning thing is a common symptom. I just love the stuff though! And I love how you've prepared it here! I just wish the Asian variety weren't so hard to find!

This sounds like an interesting salad, one I must try. My husband also does not like eggplant, but I generally make regular eggplant and not Japanese eggplant, so perhaps it would be different. I may toss in a few tomatoes into this salad, since I seem to have an over-abundance of tomatoes from our garden this summer.
