Roasted Beets w/ Smoked Trout on Brioche w/ a Poached Egg


Doesn't the title say it all?

I stole this idea from a popular Jersey City brunch spot, where they served a version of this.

Hey, I had the beets, I had the trout, I just had to buy some brioche! I can make this at home!


If you don't want to poach an egg (you can see I am poached egg challenged), then spoon a dollop of fresh ricotta on the toast instead.

This would make a nice salad for breakfast or in my case, lunch.

Use a nice piece of brioche (a French eggy white bread), or a slice of challah toasted.

Poach an egg in some boiling water w/ a tablespoon of vinegar. Here's a good way.

Lay on top of the toast.

Quarter some roasted baby beets (which I made in the a.m.), and scatter them around.
Use 2 baby beets for each person.

For each plate, use 1 piece of smoked trout from a can. Break up the fish and scatter about.

Lay some nice mache or watercress around and drizzle with some good olive oil.


Sprinkle w/ sea salt & pepper.

Yummy stuff.

This looks amazing! I've been roasting beets lately so definitely need to try it, but would also need to find some good brioche. Do you think Whole Foods has brioche?

Yes, I imagine Whole Foods would have brioche, if not, they definitely have challah, which is an egg bread, much like brioche.....it's so good!
