Winter Citrus Salad


Fruit is good for you.
Then why don't I ever eat it?

Winter is the perfect time for citrus fruits.

Clementines from Spain; Mineolas; Mandarins; Beautiful Sicilian Blood Oranges; Indian River Grapefruit; and those delicious California and Florida Navel Oranges, all at their peak season in January.

I received a case of navel oranges and pink grapefruit from Florida.
I think someone is trying to tell me something, maybe to avoid getting scurvy.
My produce drawers are now filled with fruit.


Here I made a simple citrus salad to go with salmon.
Nice and light for a change.

Peel some oranges, clementines and pink grapefruits, trying to get the sections out neatly, cutting away the white pith (it's a bit tedious).

Cut up some thin slices of red onion and fresh mint leaves.

Make a dressing of:
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp honey

Drizzle the dressing on the citrus slices and toss with fresh mint leaves.
You can add feta cheese just before serving to make this even better.


Enjoy.
and get your vitamin C!

I thought we had a deal! No pork or shrimp or chicken or beef? I need some protein badly!

Maybe I can talk her into making the salmon, too. If she only makes the salad, I'm in big trouble!

Honey, your heart's just not in these fruity recipes (unless it's fruitCAKE). Get some vitamin C from the pharmacy for your scurvy (!)and post something decadent & delish for us tomorrow.

I'm very impressed with your supremes!!! I hate cutting those! Any tips??? Had to do it in culinary school, and I still don't like it!!! I might eat more citrus like this salad. Love ALL your receipes :-) Thanks for all you do!
