New Year's Eve: Smoked Trout Spread in Endive Spears


It's all about easy and elegant on New Year's Eve.

This is a staple appetizer in my house. Trader Joe's sells Belgian endive spears with the Treviso (or radicchio) in the same package, so it's a colorful deal.


Make the smoked trout spread (can be made the day before). Baked smoked salmon can also be used if you can't find the trout.

2 cans of smoked trout, drained and flaked
1 tablespoon of creme fraiche
1 tablespoon of Hellman's mayonnaise
squeeze of fresh lemon juice
handful of chopped chives or scallions
1 tbsp of freshly chopped dill
3 large heads of endive, trimmed and leaves separated (red treviso is nice too)

Spoon the trout spread at the tip of each endive leaf and arrange on a pretty platter.
Can be assembled a few hours before and kept covered in the fridge.

These are pretty and they disappear quickly. Good for a New Year's Day brunch too.

The two different colored leaves make such a stunning presentation with the smoked trout and dill sprigs. I wish there was a Trader Joe's closer to us...Guess I'll have to settle for just green leaves.

Stacey, being a WW girl, I make this with fat free Greek yogurt. It's still SO good. I do add mayo but a little goes a long way. The smoked trout is so flavorful!

I make smoked salmon and poached salmon just like this for my clients. Its always a huge hit. I never tasted it because I never really eat smoked salmon. I know, i know but i didnt grow up with it so i guess thats why?? I finally tasted it last week and it was good. I cook by taste usually so not sure how i pulled it off. I think id really like smoked trout and the endive. I srv mine with stacys pita chips lol. Im gf so i love the idea of endive!! I add a tsp of dijon, splash of worchestier, tabasco and chives instead of scallion to mine. Have a happy new year!! I really enjoy your blog thanks for sharing your wonderful recipes!
